I have no complaints about this journey I am partaking in! I'm not 12 weeks post op. I have tolerated all foods that I have tried. I have yet to introduce breads, pasta or rice in to my diet, and I don't have any plans to anytime in the near future. My diet continues to be mainly protein with veggies and fruits. I cook and freeze meals for my lunches which I find really helps to keep me on track. These are a few of the amazing yummy things I make and freeze.!
I introduced salads a few weeks back and I am really enjoying them. My favorite is Spring mix with 1.5oz chicken breast, .5oz cheese, sprinkle of parm cheese, strawberries, cucumber with salad spice and oil. Yummy Yummy!!!
Below is a full day of meals! I work 12 hour shifts so I have to take all my meals with me to work. Some days I don't eat everything I take but I would rather have packed more healthy foods than not have them and then make poor choices.
MMMMmmmmm Pizza!! Pizza has always been one of my favorite foods!! No reason that I can't still have it only a healthier option! Homemade chicken pizza made on a whole wheat wrap! Delicious!!
I continue to train for the 5k in July. Today I completed week 4 and earned the 1/2 way to 5k Badge!!
Running is not something that I ever EVER expected that I would be doing! I'm not going to lie, it continues to be hard especially that I am now running 5 min intervals. I really don't enjoy it, but I do enjoy the feeling of accomplishment when I am finished a run!!
Roller Derby is going fantastic! I can't believe the difference I feel in my skates from loosing 60lbs. I can skate for 2 hours with out foot pain! Huge NSV!! We had our fist game of the Season on Sunday! It was amazing! I feel so much more comfortable and confident in my skates! I have a goal that I am going to be a JAMMER but the end of this season!

WOW ... is that even the same person? It certainly didn't feel like the same person. Last season even tho I loved playing derby, each game I at end I felt sick, had a raging head ache and drank at least 6 bottles of water during the game. This time I felt fantastic and drank only 2 bottle of water.
